Ingredients

  • 0.3 cup sugar — just for the caramel
  • 1 tbsp water — for the caramel
  • 2 can fat-free evaporated milk — 354 ml cans
  • 3 pieces eggs
  • 3 pieces egg whites
  • 0.8 cup Splenda — equivalent to ¾ cup of sugar
  • 1 tbsp vanilla extract
  • 1 pinch salt (optional)
  • 0.5 cup fat-free powdered milk — optional — for a creamier, condensed-milk-like texture (optional)

    Preheat the oven

    Preheat the oven to 180 °C (350 °F). At this temperature the lighter mixture sets more gently and stays creamier.

    Make the caramel

    • 0.3 cup sugar
    • 1 tbsp water

    Cook the sugar with the water over medium heat, without stirring, until it turns a golden amber color.

    Coat the mold

    Immediately pour the caramel into the mold and carefully tilt it to coat the bottom.

    Blend the custard

    • 2 can fat-free evaporated milk
    • 3 pieces eggs
    • 3 pieces egg whites
    • 0.8 cup Splenda
    • 1 tbsp vanilla extract
    • 1 pinch salt
    • 0.5 cup fat-free powdered milk

    In the blender, add the evaporated milk, the eggs, the egg whites, the Splenda, the vanilla, the salt, and the optional powdered milk. Blend just until combined; do not over-blend so it doesn't get foamy.

    Strain over the caramel

    Strain the mixture through a fine sieve directly over the mold with the caramel. Cover the mold loosely with aluminum foil.

    Set the water bath

    Place the mold inside a larger tray and add hot water halfway up the sides of the mold.

    Bake

    Bake for 50 to 65 minutes, until the edges are set but the center still jiggles a little.

    Chill & unmold

    Let it cool, refrigerate at least 4 hours, then run a knife around the edges and flip it onto a platter.

The healthy version of our ranch flan. We removed the two cans of condensed milk and swapped them for fat-free evaporated milk and Splenda, keeping real sugar only for the caramel. The extra egg whites give it structure and the optional powdered milk brings back that creamy texture. It comes out with less than a third of the calories of the original flan, but with the same craving.
